In Settings, click on "Add membership" and set different restrictions (max number of bookings). Write the rules into the description:
Create your classes, workshops, or courses with these rules in mind.
If you want to remove access under the unlimited membership, simply delete that option.
Click "Add Another Pricing Option" and select the membership with surcharge option.
Set the price (for example, with a 50% discount) and save.
